Cauliflower (Brassica oleracea)
Cauliflower for sale at a market in Siquirres Costa Rica. Cauliflower is an important crop in Costa Rica, both for export and for internal consumption. It is used in picadillo or in encurtido (“pickled” in Spanish). Encurtido is served fresh or is more commonly canned for storage. Jars of encurtido can be found on many tables in restaurants to be used as a condiment.
